Ingredients:
2 pounds ground beef
2/3 cup almond flour
2 eggs
2/3 medium onion, chopped
1 clove garlic, minced
1 1/2 TBSP mustard
1 TBSP chili powder
1.5 TBSP garlic powder
2 TBSP tomato paste
1/4 cup full-fat, unsweetened coconut milk
1 TBSP olive oil
Directions:
Preheat oven to 350 degrees and line a broiler pan with aluminum foil. Heat oil in a skillet, and cook onions until nearly caramelized (about 10 minutes). Add in minced garlic and turn off heat, allowing the garlic to cook until fragrant (just a minute or two). In a bowl, combine all ingredients including the onions and garlic. Form meat into two loaves and place on pan. Bake for about 45 minutes, until temperature reaches about 160 degrees, then let cool for about 5 minutes before slicing to enjoy!
