1 egg per roll-up
Veggies of choice: lettuce or spinach, tomatoes, peppers, mushrooms, etc.
Whisk an egg in a bowl. Melt 1 tsp of oil (coconut or olive) in a small pan over high heat. Pour in the egg and decrease the temperature to low. As soon as the egg sets, flip over and cook for another 30 seconds. Transfer the egg to a plate and fill with your favorite veggies. Roll up and eat!
