TURKEY MEATBALLS

Ingredients
1 lb ground lean turkey
1/2 yellow chopped onion
1/4 c. panko (gluten free or almond flour)
1 egg
4-5 chopped garlic cloves
2 tbsp. parsley
1 tsp oregano
1 tsp sea salt
1 tsp pepper

Directions
Preheat oven to 350 F. Mix all ingredients in a large bowl and roll into 12 meatballs. Bake for 15 minutes.

STUFFED PEPPERS

Ingredients
4 Sweet bell peppers of your color choice.
2 Yellow container of brown rice, or quinoa, cooked just shy of done
1 Yellow container of black beans, (canned) rinsed and drained
1 Yellow container of frozen corn
1 lb of browned low fat ground beef, seasoned with 21 Day Fix Southwestern Seasoning
1 Green container of petite diced tomatoes
1 Green container of tomato sauce
1 Blue container of your favorite cheese

Directions
1. Cook brown rice, or quinoa according to directions in your eating plan.
2. While rice/quinoa is simmering, brown ground meat and season with Southwest seasoning. Set aside to cool.
3. Drain and rinse black beans.
4. Portion out diced tomatoes, corn, and tomato sauce, and cheese.
5. Combine in large bowl meat, tomatoes, corn, rice/quinoa, beans, and sauce.
6. Cut caps off of peppers and pull out ribs and core. Rinse excess seeds out.
7. Stuff peppers with filling.
8. Sprinkle with cheese.
9. Bake at 375 Fahrenheit for 40-45 minutes, depending on the strength of your oven. Cheese should be melted and filling should be heated all the way through.

TURKEY BLTA ROLL-UPS

Ingredients
4-6 slices Turkey Cold Cuts
1 tomato, seeded and cut into strips
2 slices Bacon, cooked and cut in half lengthwise and then cut in half width wise (you’ll end up with 8 pieces)
1 Avocado, sliced
Baby Spinach Leaves

Directions
Lay out a turkey slice on a plate or cutting board.
Layer 3-6 spinach leaves (depending on size or how much you like spinach) in the center of the cold cut, width-wise across the short side. Layer a few strips of tomato, 1-2 strips of bacon, and 1 slice of avocado on top of that.
Roll it up and eat!

TURKEY SLIDERS

Ingredients:

1 lb ground turkey
2 diced garlic cloves
2 tbsp diced onion
1 tsp salt
1 tsp pepper
2 tbsp chopped fresh basil
2 large zucchini
olive oil

 

Directions:

Mix the meat, garlic, onion, s&p, and basil well in a bowl. Cook small patties in a pan that are the size of the diameter of your zucchini. While burgers are cooking, slice your zucchini in quarter inch slices. Drizzle them with olive oil and sea salt on both sides, and grill using a grill pan for the awesome grill marks (otherwise, a regular pan works just fine.) Cook zucchini for just a few minutes on each side so that they stay firm and do not get soggy.
