Tuscan Pork Chops

These Tuscan Pork Chops are super easy and super delicious!!

Tuscan pork chops

(adapted from sweetcdesigns.com)

Ingredients:
2 bone-in pork chops
1/2 yellow onion, diced
1 tomato, diced
2 cloves garlic, minced
2 tsp avocado oil
1 tsp dried oregano
1/2 tsp dried sage
2 tsp fresh basil
Salt and pepper

Directions:
1. Heat pan over medium-high heat and add oil.
2. Season pork chops with salt and pepper. Place chops in pan and sear on one side. Flip and sear on the other side.
3. Reduce heat to medium and add onions. Cook pork chops 2 more minutes on each side.
4. Add garlic, tomato and herbs. Simmer about 5-8 more minutes or until pork chops are fully cooked.

This recipe made quite a bit of tomatoes and onions. Although we served the pork chops with the tomatoes and onions on top, we still had leftovers. The next day, I added them to scrambled eggs and it was the perfect combination!

OATMEAL WITH CINNAMON AND APPLES

Ingredients
1 yellow container of cooked oats (gluten free or steel cut)
1 small apple, peeled and chopped into cubes
1 tsp coconut oil
cinnamon

Directions
Cook oatmeal according to directions on the package. Saute apples over medium heat in coconut oil until desired softness. Top oatmeal with apples and add cinnamon to taste.

BUFFALO CHICKEN CASSEROLE

Ingredients
1 large head cauliflower, cut into florets
6 tbs. hot sauce
1 tbs. paprika
2 tbs. garlic powder
1 tbs. freshly ground black pepper
1 1/2 tsp. salt
1/3 cup olive oil
2-3 chicken breasts, cooked and cut into small cubes
1 cup shredded pepper jack cheese
1 cup minced green onion
3 nitrite-free bacon pieces, cooked until crisp & crumbled

Directions
Preheat oven to 400. Put hot sauce, spices and olive oil in a large bowl and mix. Add cauliflower florets and toss to coat.
Spread cauliflower out in a 9×13 greased baking dish. Bake for 35 minutes, tossing once. Meanwhile, add chicken to bowl with remaining sauce and seasonings. Toss to coat the meat. When cauliflower is done, remove from oven and scatter chicken on top. Sprinkle with cheese and return to oven. Bake for another 15 minutes. Scatter with minced green onion and crumbled bacon.
