Chorizo breakfast hash

My current obsession is chorizo breakfast hash! You know how they say, “If it’s not broken, don’t fix it?” I decided to go back to the basics of the things I LOVED during my Whole30. There are many things from my Whole30 I don’t want to bring into my daily life: mainly the lack of wine and chocolate. However, this recipe is one thing I’m bringing back! It’s the perfect mix of spice from the chorizo and sweetness from the sweet potatoes….plus you get your veggies early in the day!

The original recipe calls for chorizo, but I prefer to make my own seasoning blends. Primal Cravings has a great seasoning blend, which I use and adjust to take a bit of the spice out.

Chorizo seasoning
1 T paprika
1 T granulated garlic
2 tsp chili powder
1/2 tsp cinnamon
1/4 tsp cayenne
2 T apple cider vinegar
2 T hot sauce (I use Frank’s)
2 tsp salt (I use pink Himalayan)

I mix and add that to 1 lb of ground pork. Once it’s cooked thoroughly, I remove from the pan and add:

1 c sliced yellow onion
1 lb sliced crimini mushrooms

Once onions begin to soften a bit add:

2-3 c diced sweet potatoes

I leave the skin on, but you could definitely peel them. Then add another tsp of garlic powder (or 1-2 cloves minced fresh garlic) and pepper to taste. At this point I needed to add about 1 T of olive oil to prevent sticking to the pan. Once the sweet potatoes are fork tender, add:

1 bunch kale, rinsed and chopped

Add cooked chorizo back in and mix altogether until kale is a nice dark green color.

It makes about 5 servings and is perfect for a week’s worth of breakfast (if you’re a creature of habit like myself)!

BREAKFAST BAKE

Ingredients
3 apples, chopped
3 bananas
8 eggs
1 cup almond flour
1 can pumpkin
1 can coconut milk
1 tablespoon vanilla
1 teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon sea salt
½ teaspoon baking soda
¼ cup slivered almonds
¼ cup shredded unsweetened coconut

Directions
Preheat oven to 425 degrees. Grease a 9 x 13 baking dish with coconut oil. Spread chopped apples in the baking dish.
Combine bananas, eggs, almond flour, pumpkin, coconut milk, vanilla, cinnamon, nutmeg, salt, and baking soda in the blender, and blend until smooth. Pour egg mixture over the apples in the baking dish. Sprinkle slivered almonds and coconut on top. Bake for 45 minutes to an hour or until the eggs are set.

SAUSAGE APPLE HASH

Ingredients:
1 lb. ground sausage
3 apples, chopped up
1/2 onion, chopped up
1 tsp cinnamon
1/2 tsp allspice
salt and pepper and any other seasonings you like, to taste

Directions:
Cook sausage and onion in a skillet over medium heat. Then add the apples and spices and stir until apples are slightly cooked.

PALEO BREAKFAST BURRITO

Ingredients (per burrito):
Sliced ham or turkey
1/2 egg
1/4 cup chopped veggies

Directions:
Saute the veggies in a small bit of oil over medium high heat.
In a small bowl, whisk the eggs and poor over the veggie mix.
Using a spatula, scramble the mix until cooked through. Take the eggs out of the pan.
Roll the ham around the eggs and place back onto the skillet. Grill for a few seconds each side until the ham is slightly brown.

ALMOND FLOUR PANCAKES

Ingredients:

1 1/2 cups almond flour
½ tsp baking soda.
1/4 tsp salt
1/2 tsp cinnamon (optional)
3 large eggs
4-5 T milk
2 T honey
1 tsp vanilla

Directions:

In a medium bowl, sift and/or mix together the almond flour, baking soda salt and optional spice.

 

In a separate bowl, blend together the eggs, milk, honey and vanilla.

 

Add the liquid ingredients to the dry and mix well. Let rest for a few minutes.

 

Pre-heat your pan over medium heat. Watch the heat closely; almond flour burns easier than other flours.  This will vary depending on your stove top and pan.

Add about ¼ c batter to pan.  If you have trouble flipping the pancakes, try making them silver dollar sized.

Fry the pancake till it starts to bubble and the edges just start to form.  Maneuver a spatula until the pancake and flip.  Continue to cook till the pancake puffs and firms up.

MAPLE SAGE SAUSAGE W/ APPLES

From Against All Grain

Ingredients:

1 lb ground pork
2 t sage (fresh if you have it or dried, cut back to 1 t if dried)
2 t maple syrup
¾ t salt
¼ t black pepper
¼ t nutmeg
1/8 t crushed red pepper
1/8 marjoram (can omit if you don’t have it)
2 apples, cored, peeled, and sliced
½ t cinnamon

 

Directions:

Heat skillet over medium-high heat.  Place the pork, sage, maple syrup, salt, pepper, nutmeg, red pepper, and marjoram in a bowl and combine well.  Form the mixture into 8 patties.  Fry the sausage patties in the skillet until cooked through, about 2-3 minutes preside.  Remove the patties and drain on a plate lined with a paper towel.  Sauté the apples and cinnamon in the same skillet for 8 minutes or until tender.  Return the sausage to the skillet and reheat for 2 minutes.
