Well, today’s blog isn’t very exciting. Our pipes are still frozen, which makes being in the kitchen challenging and non-enjoyable. This morning was leftover sausage and apple hash (it is so delicious and the perfect mix of spicy and sweet!) My lunch consisted of leftover butternut squash apple soup. Yesterday and today are really difficult, because my meals don’t have enough protein or fat, so my cravings are ridiculous today. It’s a good thing I didn’t have access to any sweets. I did snack on a few nuts, but I try not to go overboard with those because my stomach is not a fan of large amounts. I also had a couple hard boiled eggs to have on hand.
Dinner was leftover turkey soup (frozen after Thanksgiving). If you don’t gain anything from my blog except this: always keep meat and leftovers in your freezer! You never know when you’ll need something healthy for backup. No, I wasn’t excited about butternut squash soup for lunch and turkey soup for dinner; however it meant I didn’t have to run to the grocery store at 6:00 with no car on a weeknight. It was enough to hold out until our food delivery came today. One thing I’ve noticed since eating Paleo: I freak out if I don’t feel like I have enough veggies on hand.
Tomorrow is supposed to be a high of 40. Please, oh please let our pipes deftrost!!
