Last night I slept much more soundly, even though I still had to share my pillow with a cat. But again, how can you say no to this?
Today has been a busy day. I tried to stay in bed as long as I could to enjoy my Saturday morning, but I eventually wanted tea and breakfast. I am really loving making chai tea in the slow cooker and adding coconut milk flavored with vanilla beans and cinnamon! Unfortunately, I’m currently out of the black tea and will have to drink regular tea until it arrives. For breakfast I made leftover chipotle chicken with fried eggs on top and a side of cauliflower hash browns. Breakfast is probably my favorite meal of the day and I love having a variety of foods!
I ended up doing some things around the house (although not as much as I had planned) and made some time for yoga. I worked on a meal plan for my cousin and by 3:00 I was finally hungry for lunch. I’m getting back into the groove of not feeling like I need to snack between meals. It feels great! For lunch, I headed up leftover Moroccan meatballs and sun chokes. Plopped it on some lettuce with beets, avocado and tomatoes and it was super delicious!
Tonight I tried a new recipe that I pinned to my Pinterest board when I first started Paleo. I hadn’t made it yet because it’s not very often I have mango. I lucked out and had a mango in my fruit and veggie box this week! I made mango chicken with garlic ginger cauliflower rice. I overcooked the chicken a little, so that will be something to do differently next time but everything else was great! Luckily, I have a wonderful husband who is washing the dishes as I type and then it’s back to our Breaking Bad addiction!
I’ve been enjoying having tea in the evenings while we watch something together. It’s not the same as my nightly glass of wine, which I surely miss. However, on these cold Chicago nights, I am happy to have a cup of tea and look forward to next month when I can have some hot cocoa!
