This morning I woke up exhausted and with the worst headache! I had a really crappy night’s sleep, but don’t think it has anything to do with Whole30. I’m attributing both things to a cat who decided it was his place to take over my pillow in the middle of the night. I know, most of you probably are thinking, “Just move the cat off the pillow and go back to sleep.” Yeah, except there’s something really cute and cozy about a cat curled at the top of my head….until he plops is butt on my face. I did eventually move him once I had had enough. But imagine this cuteness curled above your head; would you move him?
The other thing that kept waking me up was my husband continuously getting out of bed to check on our dog who is supposed to be wearing a cone right now. He kept thinking he heard the cone come off, which caused continuous getting out of bed to check on our dog under the bed. All of that has to be the reason for tiredness and a headache, right? Yeah.
Once I braved the negative temps to get to work, I actually felt much better. One thing I’ve learned on Paleo and again on Whole30, is that if done right I’m not starving. I finish eating around 7 or 8 at night and then I usually don’t care to eat breakfast until 8:30 or 9. Luckily, I have the flexibility to eat whenever I want at work- I’m lucky enough to be a nanny! This morning it was leftover egg salad. One thing I ,earned last night, however, is that baconnaise solidifies when put in the fridge. That will be something to improve. It made my egg salad not so much creamy as solidified chunks. Still more delicious than it sounds, but I want creamy!! Lunch was leftover brat and sweet potato hash that was just as delicious today as it was last night. Such a hearty meal when it’s snowy and negative temps outside!
Tonight’s dinner was Moroccan meatballs with roasted sun chokes and leftover red cabbage. It was quite delicious and fun to try sun chokes for the first time!
I’m ending the evening with some vanilla tea and look forward to a movie at home with the hubs.
