My mornings are still a little tough. I think a lot of it has to do with my nightly routines. I don’t get home until 6:30 or 6:45. By the time my husband and I chat about our day, I unpack my stuff and just get settled in general, I’m not starting to cook dinner until 7:00, which means we’re eating anywhere between 7:30-8:00. I try to do as much as possible ahead of time, but we get our food deliveries on Tuesdays so the amount I’m able to do is limited to the weekends. By the time dinner is cleaned up and I do anything to prepare for the next day, it’s already 9:00 and I’m feeding the cats and getting ready for bed. It’s getting harder and harder to go to bed without watching TV, because my husband and I try to catch up on a few shows (we never watch anything live anymore). All that was to say: I still hit snooze in the morning. It is what it is. At least I’m feeling great once I’m up and during the day!
Breakfast has been the same sweet potato chorizo hash. I’m just not sick of it! For lunch I had leftover chicken, gravy and cauliflower mash. I love looking forward to my meals!
Dinner tonight was super easy and super delicious. We had Barbacoa meatballs with guacamole and carrots.
