Well, I can’t say I’m jumping out of bed in the morning. I still hit snooze a couple times, but it is Monday after all, right? I love my job, and I’d still prefer to lounge in bed with my tea than get up and rush. I am fortunate that I have the kind of job where I can bring anything I want with me to eat. It’s nice because I don’t have to worry about scarfing down breakfast or missing it if I’m late. I’m still working on the chorizo and sweet potato hash, which is quite delicious and no, I don’t get sick of it day after day. Lunch was leftover short ribs!
Now for dinner, I got it ready in the slow cooker the night before so all I had to do was start it. What’s better on a winter night after working 11 hours than roast chicken and cauliflower mash with gravy?? It was so delicious and easy! We never eat gravy anymore (nor did we much before Paleo). Everything had such delicious flavor!
Yes, I really do eat a salad with pretty much every dinner and no, I’m not sick of it. I’m SUCH a fan of beets it’s ridiculous and I like to switch up my dressings fairly often. Right now it’s a homemade Italian dressing, which is super flavorful and delicious. Side salads (although mine is fairly large) is a great way to easily get greens in on a daily basis! I do, however, look forward to being able to periodically add goat cheese to it again!
