This morning has been really busy. I made egg salad using leftover parsley garlic aioli to eat during the week. I also made applesauce for 2 reasons: to have applesauce and to use it in an apple granola I wanted to make. Yes, both are unsweetened and delicious! Breakfast was definitely later than I had intended (especially since I have been attempting to eat an hour after I wake up). I ate a little egg salad with one egg fried and zoo does cooked with caramelized onions.
This afternoon was the hardest for me. I had to watch my Broncos without alcohol. My husband was drinking delicious ciders during the game. What did I do? I made myself a fancy drink!
Unfortunately, I only had one can of seltzer left but it was orange! So I decided to garnish it with an orange, as well.
At least I was able to enjoy football food while watching my broncos win! I had leftover buffalo wings with eggplant chips for lunch.
For dinner I made Nom Nom Paleo’s Mexican Braised Beef. I only had bone in short ribs, but it tasted delicious!
No, I didn’t eat all those ribs. I ate half and saved the rest for lunch! I miss my desserts, but I’m doing a better job of acknowledging that I want dessert and then just letting it go. I haven’t weighed myself, but I know my clothes fit better. That also helps with not giving into temptation.
Another day down, another day of feeling better!
